Preheat oven to 300 F. Line a baking tray with parchment paper or aluminum foil.
In a large bowl, combine oats, wheat germ, cinnamon and salt.
Add oil and stir to coat all ingredients. Then add the honey and again stir to coat.
Spread the mixture on the prepared baking tray. Bake in oven for 10 minutes. Remove from oven and stir and re-spread out on pan. Return to oven and bake for 8 minutes. Remove, stir and re-spread and return to oven to bake for a final 8 minutes. Remove from oven and let cool to room temperature while still on baking tray.
Store in airtight container for up to a week.
