This week for our scouting group zoom meeting I was tasked with coming up with a muffin recipe that each kid could make at home. Some wanted banana chocolate chip, some didn’t like banana and so I wanted to come up with a very plain recipe that could be easily customized depending on taste preferences and what ingriedients were easily on hand. Also, I wanted to keep the base recipe simple in ingredients so that parents wouldn’t have to go out an buy “weird” ingredients that they would only use once. This is what I cam up with:
Basic Muffin Recipe (that you can customize)
The most basic, not too sweet, muffin recipe that you can easily customize to whatever flavor you want.
Ingredients
- 1 cup All Purpose Flour
- 1 cup Whole-Wheat Flour
- 1 tbsp baking powder
- 1/3 cup granulated white sugar
- 1 egg
- 1 cup milk
- 1/2 cup vegetable or canola oil
- 1 tsp vanilla
- butter/margarine for greasing the muffin tin
Instructions
- Preheat oven to 375F.Grease a 12 cup muffin tin with the butter/margarine.
- Sift flour and baking powder into a large bowl. Stir in sugar.
- In a separate bowl, mix together all wet ingredients: egg, vanilla, oil and milk.
- Add wet ingredients + extra flavors to dry ingredients and fold gently.
- Spoon mixture evenly into muffin holes.
- Bake for 18-20 minutes until a tooth pick comes out clean.
Notes
Extra Flavor Options
Blueberry – add 1 cup of fresh or frozen blueberries
Raspberry & White chocolate – add 1 cup of fresh or frozen raspberries + ½ cup of white chocolate chips
Apple Cinnamon – a 1 cup of fresh chopped fresh apple + ½ tsp of cinnamon
Chocolate Chip – add 1 cup of chocolate chip
Banana – add 1 cup of mashed banana
Banana & Chocolate Chip – add 1 cup of mashed banana + ½ cup chocolate chips
Peach – add 1 cup of diced fresh or canned peaches
Lemon & Poppy Seed – substitute ¼ of the milk for ¼ cup of lemon juice + add 1 tsp of lemon zest and 1 tablespoon of poppy seeds
Spiced Zucchini – add 1 cup grated zucchini (well squeezed of moisture + 1 tsp cinnamon + ½ tsp nutmeg
